A Cocinar! – Cooking Class
Take a guided market tour, prepare some of the signature dishes of Peru. You’ll visit a typical fresh produce market in Lima, and learn how to prepare Peru’s national dishes and drink.
We’ll spend the morning in not a regular food market -here fresh foods dropped off the evening before by a handful of local farmers, it is a sea of vendors they just sell about everything covering the most outstanding species native to Peru. Friendly vendors will be happy to give us a taste of their fruits and other wares as we marvel at the range of ingredients on offer in Peru, one of the world’s most bio-diverse countries and producer of a bewildering array of jungle, highland and coastal foods. Then, we’ll go a local restaurant with great ocean view for your fun cooking class.
You will learn cooking techniques with a local cook, The menú is fixed – we’ll use the ingredients learned on our morning market visit – the class will start with this sculptural potato salad called Causa. Two layers of chilled, smashed yellow potatoes surround a filling — in many cases, vegetables, seafood or chicken. Then we’ll prepare Classic ceviche, made with catch of the day, red onions -hot peppers and served with sweet potato and Andean corn. Also learn the steps behind making Peru’s national drink, the Pisco sour.
